In parts of TX this recipe is referred to as Angels on Horseback. Don't ask me how it came to be.
Raw oysters
smoked bacon
Lemon pepper
toothpicks
jalapenos (optional)
Cut bacon strips in half, sprinkle with lemon pepper, wrap single oyster in bacon and hold together with toothpick. As an option, you can also add a single slice of jalapeno (raw or pickled) when rolling.
Grill over medium heat until bacon is crispy. This is a favorite of mine. You want to choose a small to medium size oyster; the monsters from CA don't lend themselves to this recipe as there's too much oyster and not enough bacon.
