Smoke Weekend (again)

Head start this morning, always have to smoke some wings for Memorial Day

And trying my hand at dry aging, so these beasts went into bags the other day, a 42 day dry age means they are ready on July 3rd. Doing 2 three rib racks

But I did keep one, of course, for this weekend, going on the grill tomorrow night

Dang Brian - that looks/sounds awesome..... some day I'll be a real grown up and be able to plan more than a day or two ahead.... until then I'll just keep struggling on 24 hours marinades/brines

Day 2, some morning grilling. Blackened salmon, made some dip to bring to a cookout later

Ok, tonight was grilling night, time to cook that big ribeye, but first, some Loucanico sausage

The steak sliced and plated, I think we got the doneness perfect

The whole spread, good food and good friends. We took a moment to appreciate the good things, and those who make sure we get to enjoy the life we have
