I just got off the phone with Smokinlicious. They are selling smoke dust? Apparently it is a very concentrated dust that is used in place of chunks or chips. They are telling me you only use one or two teaspoons per smoke. Has anyone tried it.

They claim all sorts of folks on the bbq cicuit use it and did give some names but I'm not really familar with anyone on the bbq circuit. Just wondering if anyone has tried this and what they think of it? Thanks

Yeah, I heard of magic dust before. I think it was on a Cheech and Chong album.

But seriously, dust??? Get some chunks.
 
Never heard of smoke dust. I'm with Jerry use wood chunks. If you want to try something good try the BBQ Delight pellets. The Jack Daniels

I am gathering parts to make liquid smoke on wsm. I saw it on Alton Brown last year using one of those chimnea fire pits. I plan on subing the wsm for the chimnea. I wonder if I use my dryer if I can turn the liqid smoke into powder.
 
Up to this point I have solely used chunks and chips. The reason I was talking to them was to get a new order of hickory chunks. They actually have a very good product which is the reason I am giving this any thought. I have received maple, ash, oak, and cherry along with the hickory from them before (all in chunks).

The reason for the dust was that they don't have pecan chunks and I can't find any up here. This was there alternative.

I use a blend of sawdust from a company in WI I can get hickory cherry apple blends or just individuals. They come in 50 lb bags and produce a very clean smoke. I use about a 1/2 to 1 cup of dust. per cook.
 
Thanks Rick. Do you just put it on top of the lit coals at the start of a smoke? Or is ti better to make a pouch like for chips? Also how long does the smoke last for, is it similar to chunks?

The stuff that these guys are selling is fairly cheap and they have 18 varities so if it works......

I usually fill a plastic cup and dump it in a pile right on the coals. It wont somke like crazy it will smolder and combust. You could do this every hour for the first 4 if you want.
 
There is a company that sells cold smokers (in UK) that sells wood dust. That's the only place I know other than smokinlicious

Why not just find another source for pecan chunks? Plenty out there. I bought some from Hawgeyes and the product was pretty good I thought:

There were pieces with bark though. Guess you were trying to build a single order and brand wanted to get the whole order from one location? Or were you adamant about the wood being only from heartwood? I could see where they guarantee it for some of their woods that are local, but did they say the same regarding Pecan? If it were me, I think I would rather experiement and find another Pecan chunk source rather that switching to dust.

No problems using different suppliers, more of a problem finding suppliers in Canada though.

Shipping cost from the US is just to much.

For instance one bag of $14 charcoal from that link above is $58 to ship here.

Although the dollar helps right now!

I saw the guy that was selling the Smoke Dust at the Jack. I smelled of them and it smelled potent, but I was not sold. Not to mention, the flavors were kind of silly, Vanilla, mango, and some other fruitty stuff.
 
Yo Clark! Didn't realize you were in Canada. That's a hefty change in price once you ship. Don't blame you!
 
Yeah it can get rough with the shipping from time to time. That $50 some odd dollars I was talking about above was just for the shipping as well. The price of one bag of coal was on top of that.

The other bummer is I can't find charcoal on Vancouver Island in the winter. I'm down to my last bag! It is apparently a seasonal item out here, although we get no snow so I don't get why!

Either way I'm off to Seattle on Wednesday and then Vancouver next weekend so it'll be stock up time then!

I'll bump this up, I got a sample of their dust that I'll try this weekend. I'm trying the bourbon dust on a pulled beef smoke.

I called them and asked them to clarify one thing, is the product supposed to simulate smoke from wood of the 'flavor', mango dust for example will produce a mango wood flavored smoke, or flavor what's being cooked to mango. The answer I got was both.

I have to say I'm a little skeptical and using as directed I think some of the dust will become airbourne .... who wants to eat flavored sawdust?? But we'll see ...

For Clark and other Canadians Smokinlicious has a Candian website and we can order chunks, blocks, chips and dust from them ... pretty reasonable prices compared to mail order wood from the US I think.
 
The Smokinlicious Dust was prety disappointing.

I used a few T in a Traeger Lil Pig along with Pecan pellets on some ribs. I didn't think I could taste it.

I used a few T for a pulled beef cook along with mesquite. I didn't think I could taste it.

I used HALF A BAG and no other smoke wood during a 3 hour pork button bone cook and I thought I could taste it. Half a bag should have knocked me over in my chair but I could hardly taste it.

It's curious they made this product to impart the flavor indicated. If I wanted mango flavor I'd make some sort of mango sauce or glaze.

Anyway, I think it might be ok with like chicken or fish or pork where you aren't using strong rub, sauce or other smoke woods and probably more appropriate for grilling or short smokes.

I don't plan on buying any based on this experience but at least it didn't become airbourne when sprinkling it on coals as I had feared.
