I'm going to put 2 small pieces of brisket in my DIY WSM mini. They are of equal size about 2 pounds each. I know it's done when it's done but just for estimating cooking time should I be looking at 2 lbs or 4? I really think these be done in 3 to 5 hours. What do you guys think?

By weight the two pieces equal four pounds, by volume they are not a four pound piece of meat. I would use the two pound timing as a guideline. It's more like two MG-B do not equal a Land Rover, no matter how close the weight.
Three to four hours I would think should do it.

Mark...

What temperature do you plan to run the pit at ?

Do you plan to foil ?

Approx. what size are the brisket's "pieces", thickness wise ?

Without this information, it would be difficult to even hazard a guess.

Hi Bob
My mini seems to like to run @233 degrees. The pieces are about inch and three quarters thick. No foil until rest time. Thanks

BOOGERS! 4 and half hours into it and I can't keep temperature up in the mini WSM. My charcoal must have got damp over the winter. O well I'll finish it on the gasser.
