Wife wanted a brisket. I wanted some sleep. We settled on a 4 lb flat. I explained the caveat of the flat and she signed on the dotted line understanding its not the same as cooking a whole packer...

Away we went.

Foiled at 145, unfoiled at 193 to let the bark set again. Dropped back off in temp to mid 180s then back up. Pulled at 198 and foiled in a cooler.

Final. Flavor was great. Still on the dry side as I tried to explain to my wife prior to cooking. Flats by themselves stink, but the Texas Crutch sure helps save what moisture it can. Next up, a HH full packer.
