Slow N Sear Suggestions

Want to break in the slow n sear soon and was wondering what I should start with for some easy grilling?

Suggestions for some can't miss cooks?

I have been using the Bro-n-Sear (Two Weber charcoal baskets riveted together) for nearly every cook on the kettle. It's part temp control and part preventing charcoal migration. So far, that mod might be my favorite of all...
