Simple Skillet Brownie

Made a simple chocolate pecan skillet brownie I’m the Field #8.

Recipe:

1/2 cup (1 stick) unsalted butter, melted, plus more for greasing skillet
1 cup white sugar
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
3 large eggs, at room temp
1 cup all-purpose flour
1 cup chocolate chips, chunks or nuts, plus more for topping

Preheat the oven to 350°F. Grease a 10-inch skillet with butter.

In a large bowl, whisk together the melted butter, sugar, cocoa powder, vanilla and salt.

Add the eggs one at a time, whisking between each addition.

Fold in the flour and chocolate chips just until the flour is combined.

Transfer the batter into the greased skillet, smoothing it into an even layer. Sprinkle additional chocolate chips on top.

Bake for 30 to 34 minutes until the center is just set.

Remove the skillet from the oven.

Allow to cool 5 minutes and turn out onto cooling rack. Serve or allow to cool fully and serve later.

Really boost the flavor profile. For chocolate anything I bake I use ghirardelli 100% cocoa premium baking powder. The deep chocolate flavor beats other brands.

Case, here's one Barb made yesterday kind of.
She used the whole box of cake mix and doubled the cinnamon and nutmeg.
She made the two silicone egg molds then used the rest of the batter in a mini loaf pan and made 4 mini loafs baked for about 25 minuets at 350. She did not roll the mini loafs in the sugar mixture.
Really good and easy to make.

INSTANT POT CHURRO BITES



Ingredients

7 oz (1/2 box) white or yellow cake mix, prepared according to package directions
1 tsp cinnamon
1/2 tsp nutmeg
1 cup water
1/3 cup brown sugar
1 Tbsp cinnamon

Instructions

Spray the inside of two silicone egg bite molds with non-stick spray.
Add cinnamon and nutmeg to the prepared cake mix. Stir to combine.
Spoon the cake batter into the egg bite molds until they are 3/4 full.
Tap the mold on the counter to settle batter and remove any bubbles. Cover with foil, sealing edges.
Insert trivet in the Instant Pot and add 1 cup water.
Carefully place the egg molds onto the trivet. Lock the lid in place and turn the knob to sealing.
Press the Manual or Pressure Cook button and set for 12 minutes.
When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
Carefully remove the molds from the pot. Place on a cooling rack and allow to set for 5 minutes before unmolding.
In a shallow bowl, mix together brown sugar and 1 Tbsp cinnamon. While still warm, roll each cake bite in sugar-cinnamon mix.
