Shrimp Burrito

I've been trying to perfect my rice n beans, lots of hits, a few misses, but I'm getting there.

I made up a batch of each today, marinated about a pound of shrimp in the juice of one lime, a little hot sauce, cilantro, and avocado oil.

Grilled for about 3 minutes per side - I didn't want to overcook but next time I'll go a little longer.

My rice is still hit or miss (tossed a batch yesterday, but the batch I made a few days earlier was perfect), and the beans - I'm working on using lard in the beans but the flavor was so different I went back to just oil to see, then today I used a tiny amount of lard w/ oil.

Very good - I can't seem to make enough; anyone who sits down to them pretty much eats a can's worth.
 
Looks like a definite hit from here! I'll take 2! 2 burritos and 2 skewers of shrimp that is!!

I've yet to actually eat shrimp tacos. Grilled or otherwise. Your plate loos great though.

I tried my first one late Halloween night probably 2011 - it's now tied @ 2nd place. My top 3 favorite burritos are Bacon/Egg/Potato/Cheese, California (carne asada w/ potato), and Shrimp. Rice/Bean/Cheese is another fav, so is chicken ok I'll stop there. I like them all :)
 
Very nice!! Ok so tell me how are you making your rice? White or mixed with the beans inside? Are the beans dry? Or in the can? I can help you with my method.
