Spent the morning rubbing 4 butts.
Total of 27.17 lbs. I rubbed all four butts with different rubs. I figure this will be a good way to test the flavors and tune in what I like. OR I will just pull and mix them all!
I am going to post a link to the photos, and add more as the smoke starts and goes on.
And after this smoke I wont post in the New WSM Owners board
I figure 2 smokes makes my smoker used...
hehe, wife is getting sick of me looking at my smoker the way I do....

Hey guys, I put my 4 butts on at 7:38 p.m. my time, it is now only 9:55. Temps are steady and I am happy... WELL as happy as I can be, the 12yr. daughter has 10 friends spending the night.....
Anyhow I was just wondering, with over 27 pounds of pork butt smoking, do you still go by 1 to 1.5 hours per pound??? I know it is hard to say when butts will be done, but am I really looking at 27 to 42 hours or so? I have never done this much meat at once, and it just hit me. I was at one to many beers hours ago, and just thinking about a good cee-gar, but will I still be sitting here this time in 24 hours?

Total weight is immaterial. Though it might take a bit longer to get up to target, the four should cook in the same time as one.

Boy, it's 1 am here, I am still sitting under the stars have a beer or, more. The butts have been on for a bit over 5 hours now. I haven't moved the bottoms ones to the top or the top to the bottom yet, and not sure I need to. But I am having fun, and believe it or not I just check temps. They are all in the 160 range. If they stalled I didn't catch it. Or they will stall at this higher temp..? But I don't think so. Anyway, the new WSM is holding tight as a bell at 234 to 238. Weather is great at 69 degrees, and I feel like I could sit under the stars to the sun comes up.. But then again, the beer.....
Anyway, will post more later. I feel like I am talking to myself 1/2 the time, but it feels good to chat..

With years of butts cooked on my old E.C.B., my stalls almost always hit in the 150 to 157 range.
But we will see. I figure I am still into a long night. 9 hours into it now, so I can't stop!
Getting a bit slap happy at this time.. But can't wait to try the pork!

Sounds like a great evening. Pesonally, my favorite time of year to do this is fall. I love the cooler temps (not cold) and no bugs (mosquitos) to speak of. Enjoy the cook and enjoy the night. Hope you do get some sleep though cause you got some work to do pulling pork - which I'm sure will be great.

Jerry, I do love to smoke in the fall. Seems like the smell of the meat and smoke are even better.

Well , the smoke went better then I thought. Well, FASTER then I thought. I don't know how it is possible, but the meat was done in 10 hours. I put the meat to rest and took an 1 1/2 hour nap. Then started pulling meat. The bear claws worked well, but after four butts they have turned dull and bent. Seems a little cheat to me, would love to see these in metal.
I started with 27.17 Lbs. of pork butt. After the bone and fat was gone ( what fat I could even see) I was left with 11 Lbs. 8 oz. Seems really low to me, but I wont gripe to much, all four rubs tasted great.
Till next time...
