I hate to throw food away. When I buy whole spare ribs I remove the membrane and the piece of meat that runs across the bone. Sometimes I leave the breast bone on. I take the scarp or meat clean it and usally snack on when I am checking the ribs. Sometimes I remove the breast bone and use it for a snack or throw it in with the beans then pull it out before serving. Just wondering is anyone else doing this or using it differently.

I know when I trim butts I freeze the fat and use it vegetables.
 
Trimmings are also a good way to test different rubs without committing to a whole rack of ribs.
 
I like to use my scraps in soup, I usually season them less just s&p smoke them till they are cooked but not tender, throw them in soups or collards or anything I might use a ham hock in. just my two cents

I usually cook the rib ends with the racks, smoke for 2 hours, removed/chop all the meat and mix with the beans. The smoke from the meat really gives the beans a nice smokey flavor!!
