Well, I'm not that new to the smoking game, but new to the WSM.
I won a Brinkman bullet smoker about 6 years ago at a golf outing, didn't take it out of the box until my neighbor said something about smoked ribs. Drove to PA to get it from my parents house and been hooked ever since.
Bought a COS offset smoker from Walmart about 2 years ago. Spent more modifying it then I did on it. It works but was looking for something easier. Just built a new much bigger fire box for it.
So flash back to a month ago. Was looking for a WSM on a whim. Hit Craigslist and found a 22.5 local for $200 in very mint shape. Asked the guy on the phone why he was getting rid of it and he said he moved on. Show up and he opens the garage and there is a Gator Pit in there.
I've cooked about 6 times on it so far and still learning.
First run was a brisket (or a flat from Shoprite with a nice fat cap) came out a little dry and over done but everyone liked it. Did some ribs at the same time that were over cooked and foiled too long, but very good.
Next day did chicken legs for the guys at work. 10 lbs of legs that were awesome and still talked about.
Saturday I picked up a packer from Walmart and put it on at 6 PM. Finished around 8 AM. No wrap on it and it suffered. Came out with a very think bark, but decently moist. So lesson learned I think.
Anyway, got a Cyber Q coming for Christmas and can't wait to keep experimenting. Hopefully doing a bunch of Pork butts for our Company Holiday party next week.
