Lets start with diced / minced garlic and onion sauteed with EVOO in a hot black iron pan.
Add in about 14 diced Roma tomatoes with some fresh basil, fresh rosemary, S&P, and a dash of cayenne. At least I thought it was only a dash ... it turned out a little, well spicy.
Adding the Italian sausage indirect.
After 10 minutes or so, getting a direct sear on the sausage.
Sausage sliced and into the sauce while the pasta (mastaccioli) is in the boiling water.
Added some pasta water to the sauce for some extra body. Mmmmmmm!
Plated with some Parmesan.
Could have done this inside, but it's so much better on charcoal in the kettle!
