Wife is out of town, so the boys and I can eat whatever we want--no green stuff! Sent the boys to the store to get a whole roaster.

Then I cut her little spine out and laid 'er open. Seasoned with Kosher salt, black pepper, and garlic herb. Here's dinner, ready for cooking.

Moved off to indirect and threw some pecan chips on for smoke.

So now just sit back on the Adirondack while the chicken gets happy. Thought I might catch some of the air show going on at MCAS Miramar this weekend, but they were between shows. I can hear the Blue Angels overhead while I'm posting this though--the sounds of freedom I call it.

Perfect chicken dinner Dale. sounds like a good time for boys night.
 
Dale, love the relaxing area. I really love the spatch chicken with beans in the tortillas, perfect man food. The "Ranch Style" beans, love em'. I like the pintos with jalapenos.
 
There is nothing wrong with that meal, Dale. In fact, it's awesome! Those tortillas are the perfect addition. I've never "spatched" a chicken before, but I'm certainly going to try one soon.

My sister and her family live in San Diego. They went to the show both days and loved it. And they live close enough to Miramar that they got to enjoy the fly-overs after they got home :D
