A question Jim: When you grill chuck eyes, I assume you grill directly to medium rare? Also, when shopping for chuck eyes, go for 1" thick or more? I've been seeing some very slender chuck eyes in the stores and am concerned they'll be tough. Thanks - G

Gary, yes, direct to MR... I only find chuck eyes 1 inch or slightly thicker... and I have seen chuck STEAKS labeled as chuck EYE STEAKS. NOT the same.
Perhaps that is what you've seen, just mislabeled.
Chuck Eyes will have lots of marbling and quite small actually, I find them two in a package with a total weight of 1 pound give or take...
