Salmon three ways

Doing some Japanese style fish for dinner.

Aburi salmon. Sashimi salmon. Cubed salmon.

Aburi is marinated 10 minutes in seasoned rice vinegar and sugar. Then sliced and torched to barely cook it.

The sashimi is sliced belly salmon.

The cubed salmon was salted for 12 minutes and then rinsed and dried and cubed.

Hurricane sauce and a pineapple soy sauce for dressing.

I like that a lot.

Brett, have you tried salmon or trout roe?
I’m thinking of adding roe as an add on to my oyster platters.
I've only done sturgeon roe and that’s tasty on shooters.
