Salmon / Plantains / Pineapple

I decided to try something different for the side dishes of my weekly salmon dinner. The meal ended up being closer to salmon + dessert than salmon + sides, but it was a nice change of pace from the usual starch & vegetable.


Coated some slabs of pineapple with some Dizzy Pig "Pineapple Head" rub...



A few action shots and plated photos of the plantains and pineapple. I got good results by using ripe plantains, with a crisp exterior and slightly sweet interior, as opposed to the train wreck I ended up with the first time I tried grilling unripe plantains (dry and tasteless). The pineapple caramelized nicely with the generous coating of rub I applied.



Finally, a plated picture of the salmon. Sorry for not having action shots :(

Excellent brother, love the plantains, I get them at the Mex Mart as they are always nice and blackened well. The ones from the regular grocery you got to wait a week or more before they are ready.

Looks great! I'm going to have to grill some plantains soon. Never done that. I picked up some Dizzy Pig rub a while back. I got the Shakin' the Tree. It's a lemon pepper seasoning and will try it on some salmon.
