Running hot


 
First cooks will usually run a bit hotter until the unit gets seasoned. How far open do you have the vents? The top should be 100% open and the lowers used to shut the flame/heat down more. If you cant get temps down using just the lowers try closing the top vent down a bit also . Do you have water in the pan on fisrt run or saucer in there? Is this temp reading using the built in thermometer? It will read 30-50 degrees different than the grate temp also.

Mike - thanks. I am using a maverick at grate. Water in pan. I just closed the top vent a little. Temps are going down now
 
Mike I just start out with 12-13 lit coals using the minion method. All vents open until it reaches about 200. Then I close 1 bottom vent and the others I close to about %50 and %25. Just make further adjustments from there as needed. Top is always open.
