I use coals on only one side. That is the side that the rotis turns towards from the top.
Many books and instructions show it that way. One is that it allows excess fat to drip off away from the coals. Also look at almost all rotisserie set ups and you will find the fire at one side. The science behind it is beyond me. Its how I have done it. But there is nothing in the world that says you can't do it any other way.
