I was home yesterday with my daughter cause she wasn't feeling well so I decided to cook some ribs. I got 2 racks of untrimmed spares and trimmed them St. Louis style, rubbed down with Wolfe Rub Original and smoked over Kingsford and hickory for 5 hours, then sauce during the last hour with Ole Rays Apple Cinnamon BBQ Sauce. My wife made a broccoli salad and baked beans! Pretty darn good meal if you ask me!!

Looks good to me. I see you use a rib rack, I've thought about getting one. Seams pretty handy for cooking multiply racks. John

Yes John, ribs racks make space in a small area! That particular rack is one from William Sonoma and is Teflon coated and very easy to clean! Here's a pic of 4 whole racks of spare ribs cut in half on the top grate. So yeah rib racks are a great investment!

Nice job and thanks for the pics...those look really, really good. Wish I didn’t have a Christmas party to attend tonight otherwise I would be smoking up some ribs. I also use a rib rack when cooking more then one rack and I find them to be very handy. Thanks again for sharing and well done.

You do lots of good looking smokes. I appreciate the pictures, and have learned plenty from your posts.
Using a rib rack, do you flip the ribs, and if so, about how long into the cook doing spares and baby backs? Thanks.

Thanks for the kind comments guys.

Dave, I do not flip the ribs. The only time I even open the lid is to foil if I'm foiling (those ribs in the pics I did not foil) or to sauce.

I too use a rib rack from Weber. Mine is almost 30 years old, not Teflon coated (a bit harder to clean), and I had to bend the corners to get it to fit in my WSM.

Your pics make me want to do ribs again soon!

Yeah, it was unfortunate to see him get hurt....I think he was coming around. It's exciting to watch him grow and learn! Hopefully Todd Collins can rally the team and we can sneak into the Playoffs!!
