Ribs on the wsm(first try)(modem killer)

Ok my mother and her man was over for dinner yesterday.

Ribs,chicken wings,stuffed peppers and cheese pie was on the menu.

Wood:apple

Ribs: rubbed with my own hot and sweet rub.
Sprayed every hour with pure apple juice.
temp: 210-250f
Time 6hours (not foiled) rested 15min in foil before cutting.

Chicken:Hot rub.
Time:1hour 15min. indirect (seared over coals first)(but kept them in the grill when i shut down vents to keep em warm to serving a big mistake dryed out a bit)

Peppers: filled with a mix of feta cheese, hotpepper,black pepper and thyme.

Pie: "västerbotten" cheese(stong flavored),chanterelle´s,onions,eggs and chive(salt and pepper).

Wow! Some great stuff! I'll take an order of all. Where was the "pie" cooked? Is there such a thing as "aged" västerbotten cheese versus a softer fresh?
 
The pie was made in the oven 200c for 20 min.

This cheese is "aged" in 1 year sounds like a short time for tasty cheese but it have all the salt crystalls like a "Parmigiano-Reggiano"24month aged have.

Its a swedish cheese but all aged cheeses could be used im sure.

Wow, that's a lot of food for four adults. Everything looks fantastic. I'm really interested in the västerbotten cheese pie. Looks a bit like a quiche. Care to share the recipe?
 
Off course im here to share.
And yes 1 whole rack of ribs were left uncut but rather have left overs then to short on food.

Here is the recepy for the pie:

pastry:

1 1/4 cup of flower
4 oz butter
2 tablespoons Cold water

Mix this into a dough and let it rest in the refrigerator for 15-30 min

Filling:

2 onions (choped)
chanterelle´s (or any mushrooms will do)
2 eggs
3 oz Double cream
1 cup Stong"aged" hard cheese(grated)
1/4 cup shive (choped)
(salt and blackpepper)

Sear the onion and chanterelle´s in a pan(add sum backon here if u like).
Mix the eggs,cheese,shive and the cream and in with the onion and chanterelle.

Put it in the pie form and toss it in the oven for about 15-20min in 400F
