Ribs for Two

Well we decided to skip the Halloween parties this year. So I figured we may as well still eat! So trimmed some spares St. Louis style. Then cut the rack in half for mine vs hers. Mine was seasoned with a kruger/jane-kruger rib rub hybrid. She wanted hers to not be salty, sweet, or spicy! Jeez!?! Ok so I mixed lemon pepper, corriander, onion powder, garlic powder, thyme, dash of montreal and a touch of ground pepper for her rub.

So nice to be able to do this outside and wash my hands right there.

Moved them to the smoker on a rib rack at 250 degrees for 2.5 hours with apple for wood then foiled with very little liquid and back on for 1 hour and 20 min.

When the ribs were just about ready we grilled some leeks. If u ain't done them yet try em they are great! We cut em, cleaned em, par boiled, drained, oiled, seasoned and grilled.

Move over leeks the ribs are ready for there turn over the heat. Hit mine up with some Delmonico's restaurant spiced apple grilling sauce and hers with more of the liquid from the foil which was 25/75 mix with lawrys lemmon pepper marinade and water.

Plated em up with the leeks which she rolled up and some wild rice.

She loved em too there was nothing left over sorry yall! Success she declared as hers were not too salty, sweet, or spicy. Mine however were the perfect melody of those flavors and more! Some of the best tasting and best textured ones I've made yet and I've made a ton!

Times have been a little tight in the kaz S household. Me, my appetite, and my dogs would of much rather smoked up atleast 2 more racks and the trim. But were still eating good and down here in FL I'll still be smoking and grilling through january and even in march try that in mapleville! And we were still plenty belly busted after these.

Just playing but up there is the world your deep freeze or do ya still have to put stuff in the freezer cause of bears? Floridians don't know what de-icer is. Here if there is a chance of flurries or freezing rain the schools and everything shuts down.
 
Well as long as we hang the meat high enough up the tree the bears really aren't that big of a problem. It is nice to be able to keep the beer cold by sitting the case by the back patio door , mind you then my huskies get upset and try to dig their way into the igloo( they love beer).
