Well we decided to skip the Halloween parties this year. So I figured we may as well still eat! So trimmed some spares St. Louis style. Then cut the rack in half for mine vs hers. Mine was seasoned with a kruger/jane-kruger rib rub hybrid. She wanted hers to not be salty, sweet, or spicy! Jeez!?! Ok so I mixed lemon pepper, corriander, onion powder, garlic powder, thyme, dash of montreal and a touch of ground pepper for her rub.
So nice to be able to do this outside and wash my hands right there.
Moved them to the smoker on a rib rack at 250 degrees for 2.5 hours with apple for wood then foiled with very little liquid and back on for 1 hour and 20 min.
When the ribs were just about ready we grilled some leeks. If u ain't done them yet try em they are great! We cut em, cleaned em, par boiled, drained, oiled, seasoned and grilled.
Move over leeks the ribs are ready for there turn over the heat. Hit mine up with some Delmonico's restaurant spiced apple grilling sauce and hers with more of the liquid from the foil which was 25/75 mix with lawrys lemmon pepper marinade and water.
Time to bring em in and cut em up.
Plated em up with the leeks which she rolled up and some wild rice.
Time to dig in!

She loved em too there was nothing left over sorry yall! Success she declared as hers were not too salty, sweet, or spicy. Mine however were the perfect melody of those flavors and more! Some of the best tasting and best textured ones I've made yet and I've made a ton!
