Recent cook on the Performer. Since I haven't tried smoking on it in a while, thought I'd try a slab of St. Louis ribs indirect, then add some boneless thighs to the mix too.
Sorry for no more pics, but I was doing honeydew work once the temp got settled. Let's just say that the fam loved this one and since we are minus one (she's in college), this was more than enough to feed all of us.
On to the cook. Trimmed out ribs. Removed membrane. Rubbed with some modified Chris Lilly rub & let them sit for a couple of hours. Put onto the grill (smoker, LOL!) about 275° for a couple of hours, then foiled with some honey & brown sugar and a little more rub. I rinsed & shaped the thighs and seasoned with a little Oakridge Game bird & chicken rub, and let them sit in the fridge. I used a good baking pan wrapped in foil (Shhhh... don't tell my wife) because, well.. it seemed like a good idea at the time. Turns out it was a good idea when I sauced the birds because it kept the grill from getting saucy & gunky. Less cleaning = happy.
Anyway, I drained some of the rib goodness from the foil and poured it over some oven baked beans and served with some homemade slaw & cornbread.
It was a fantastic meal.
