Ribs 2 Ways. ..

So guys I need some help/advice. I visiting with my in-laws and my father-in-law wants to make us some ribs while we visit. There will be baby back ribs and there are supposed to be beef ribs around here too (though my father-in-law didn't see them when he was looking for them yesterday). Anyway, I won't be cooking (and even if I was I am away from my WSM) but I have been asked for advise on how to cook these ribs. What we have to work with are the following:
  • Cast iron pot in the oven
  • Traeger pellet smoker
  • Char-broil or Brinkman, I can't remember, gas grill

I know my father-in-law can make a very tasty (albeit not barbeque) rib in his cast iron pot (low and slow in the oven), however he wants to put some smoke on it. The question is, do we put the ribs on the Traeger for and hour (or two or three) first and then finish the ribs in the oven? Or do we do the exact opposite? Or do we do time on the Traeger, then the cast iron pot, then sauce and put them on the gas grill to finish?

I need some advice here cause my normal MO is to set 'em in the WSM and cook 'em till they're done.

Thoughts?

I don't see any reason to use two different cookers. Use the traeger, its a great smoker and more than capable of doing the job of ribs. the only question is foil or not. Just treat it like it was your wsm. The method is the same, just a different cooker.

I think one of the issues with just using the Traeger is that he is afraid of too much smoke. Since I am not familiar with them I don't know what to expect and don't want to run the risk of them being over smoked either.

Difficult situation. I doubt you could oversmoke anything with a pellet smoker. Higher temps with those = less smoke. But you gotta let a man run his grill or cast iron pot. That's just guy code. Especially a father-in-law. I don't envy you that situation. I usually just shut my mouth and look on horrified.

edit - I say put them in the traeger for a couple of hours and finish in the oven is the right call. Makes everyone happy.

Pellet cookers burn pretty clean. If your worried about too much smoke then just foil them. I'm just against putting something in the oven. Just doesn't seem right.
