Recently I noticed a few questions regarding using lump.
Here are some pictures of the smoke I did over the weekend. I did 24#'s of Pork Spares. Took about 5 1/2 hrs. of smoking time.
Smoke Wood I used.
My Rub.
My Lump.
Ribs after they were rubbed.
Charcoal bowl with 1 full chim. of un-lit lump and smoke wood.
1 full chim. of lump about to become hot coals.
Dumped the hot coals into the bowl.
After everything catches and the smoke calms down (approx. 30 mis.), I assemble the cooker, put in the ribs, vent the fuel door (see picture) and wait until it gets up to 250-260.
Ready to close fuel door.
Just where I want it.
Here are a few slabs after about 5 1/2 hours (I don't sauce my ribs. I let the people eating them do that.)
