I have smoked baby backs in my WSM using a rib rack and also just laying the ribs flat on the grate. I will mop a couple of times with an apple juice mixture during the smoking process. Do ribs smoked using a rib rack turn out less moist than ribs just laying flat on the grate? I may be wrong in this assumption, but I would think that the juices in the meat and those I apply during the mopping process would run off more easily in a rib rack leaving a little dryer piece of meat.
