Recovery cooking


 
Still recovering from a bad flu. It was not corona. Corona apparently was high fever and no other symptoms. I had high fever and everything on top of it. Thanks, daycare.

I had some frozen salmon thawed, and rubbed, and rested in a cat-safe location.

At about 150c/300F on the kettle, doing a reverse sear

Final result, with FDA approved minimum 60c/140F internal temperature

I overcooked it slightly, the thinner parts became hotter than my target temp. Generally, I take good quality salmon off earlier, and have a better fish, but we wanted to be safe. The reverse sear gave me still a somewhat moist salmon.
 
Looks good....I generally approach salmon by not cooking it at all over the fire...and I cook to a medium rare.
Try to get some smoke on it and it usually is pretty darn good......
 
That meal will make anyone feel better. Hopefully, you are well on your way to full health.
