You could use either rack, butt will do for 3 racks of BB. With potatoes, wash them 24 hours in advance of smoking them and they will take smoke easier. They could be done on either rack also, given them a couple of hours.

Phil,

You can use either grate or both; the top grate will run a little hotter but not enough to make much difference. If I were only using one grate, I would use the top because it's easier to get to, and I would take the bottom one out so it doesn't get dirty.
