Raw Uncut Pork ****

Saturday we went down the Eastern Market to pick up some produce, and
of course lots of PORK. From our friends at Gaier farms, one of two local farmers
who sell their fresh and smoked pork products at the market, from Thanksgiving
to Easter.

Whole piglet anyone. I was this_ close to buying this little guy.

Fresh pork bellys, which we purchased 7.5 lbs of. All of this pork was alive and squealing Wednesday,
doesn't get much fresher then then this. Fried some up fresh (a.k.a. side pork) when we got home
the rest is for bacon.

Two of the six chops, the other four went in the chest freezer.

Two chops on the grill, along with some Rosemary & Dijon skins and knob onions.
All purchsed at the Eastern Market.

Are you going to make head cheese, Mack? That's a post I would love to see. Great lookin' chops, and nothing is better than buying your meat from the farmer who raised it.

My brother and I gave it a go a few years back, alot of work for what you get. turned out good but not great.
The family that we buy the pork from make their own, and it's awesome. head chesse is not for everyone, you
either like or think it's disgusting. The head pic was just to show they have all the cuts.

Hey Paul -- I love Eastern Market. I was there on Friday briefly for a quick wine run. I will have to check out the pig farmer -- sooner than later. Good looking cook. I too look forward to the bacon pics and thread.

I"m familiar the wine shop your talking about, we have known the McCarthys for more years then I care to admit.
The pork farmers last Saturday is Easter weekend.
 
Outstanding - you really know how to make a day out of it! That market is an awesome resource...
