Hello All,

We are in the midst of a hectic weekend and I was on duty for dinner Friday night. This weekend we have five simultaneous activities to accomplish. The High School Band picnic, an award ceremony for my Mom, a community beautification project, a church ministry project, and a softball game. I had volunteered to cook Mediterranean Chicken for the band picnic before finding out about Mom's award ceremony in another town. One of the other band Dad's said he would cook it if I would prep it. So I spent the afternoon prepping 140 chicken skewers and mixing up the marinade. I had planned to smoke a meatloaf for dinner but as dinner time approached rapidly and I had not started the meatloaf, I decided to call an audible and make some bone-in Mediterranean Chicken. I marinated some cut up leg quarters and some zucchini for an hour or so and cooked them on my rescued OTS. Pictures appear below.

This was a great busy night meal. The marinade takes just a minute or two and and hour of marinating is plenty. The chicken was excellent, the skin was crispy and the lemony flavor was enjoyed by all. The weekend went off very well. All the activities were completed and everyone is enjoying that tired feeling after a job well done. Thanks for looking...
