Wanted some wings for the LSU game today and since it was an early start, I made a basic brine of saltvand brown sugar last night. I also had to do my first bacon slab today because it's going to rain buckets the next few days. (Later post). I pulled them from the brine, rinsed and rubbed with some SYD chicken rub. I started about 2/3 Weber chimney full of KBB.
I put them on and rotated the lid every 15 minutes. They were ready at about the 50 minute mark. Just in time for halftime.
No plated pic, but they were delicious. Crispy skin and really juicy interior. (Bacon is still smoking)
