Quick Butts!!!

Past Saturday planned to cook two 6-7 lb. butts, overnite cook. Fired the wsm with full ring of K, apple wood and hickory. mm start with 12 briqs. Put butts on at 10:45 pm, temp about 230, ET-73 food and smoker probes. Stabilized temps at around 250. Went to sleep around midnight. Had the ET-73 set at 280 high and 200 low for smoker, 190 for food. Awoke around 4:30 am, the butt that had the et food probe inserted in read "181". That's only 5 hours!
Foiled butts, put them in oven at 220 to finish to 190 degrees so that I could put two boneless pork loins on to finish by mid morning. planning to eat until around 12 noon.
That's less than one hour per pound! Turned out great. Thinking the temps may have spiked to "high heat", but the alarm never went off on the et73. anyone ever experienced this?
 
Maybe it got up there, just a hair shy of your alarm, and cooked mostly (or significantly) at the higher temp (or maybe higher and the alarm wasn't set? Been there done that). In the upper 200s my butts take a bit less than an hour/lb from start to finish.
