Questions before first ribs on WSM


 
Ribs cook very fast in foil, so it's easy to overdo them. I've gone back to cooking them until almost done, then foiling them for 15 minutes max. All you're looking to do is to soften the bark and maybe add a little sweetness (with honey, butter, agave nectar,brown sugar, whatever) and that doesn't take long at all.
 
I have always rubbed the night before and I have never had an issue with too much moisture getting out! To each their own. I rub with salt, pepper, chili powder, cumin, cinnamon and brown sugar with no liquids. I usually do 2-2-1 at 250-275.
