Ribs cook very fast in foil, so it's easy to overdo them. I've gone back to cooking them until almost done, then foiling them for 15 minutes max. All you're looking to do is to soften the bark and maybe add a little sweetness (with honey, butter, agave nectar,brown sugar, whatever) and that doesn't take long at all.
