Been busy lately with a bathroom and getting ready Jedi youngling number 2! Today was the party for my daughters 2nd birthday. The CEO requested my Jedi BBQ powers for the day. That's all excuse I needed! Today's cook-3 bone in pork shoulders and 200 wings. This was my first run using my new ET-733. Boy was that nice. I cooked the shoulders over last night and the wings this morning. I used the Chris Lilly 6x rub and injection on the pork. Fast Eddies all purpose on the wings.

Here is my makeshift wind guard. 3-2'X3' metal shelves. Worked great. I went higher heat to makes sure they were done in time.


This was when my high pit temp alarm went off at 4 am. Porkies went on at 11 pm. Top grate. Fat caps up. No water in pan. Target temp of 275F. Alarm at 300F.

Once my pit came up to temp, it spent most of the cook around 265F. I changed the bottom vent to half when it spiked to 300F. Settled right back down to 265F. They were done at 7 am. I forgot to take a pic of them done. Lol. Too busy getting ready for Round 2. Wings!


Halfway on the wings. The ones on the outside edges of the racks got done by first rack rotation.


Just about all done. Last ones coming off now...

I was so busy getting things ready for the party I forgot to keep taking pics. At this point, the wings went in the oven covered in foil to rest with the oven off. I pulled the pork right in the chaffing pan. Wings went in another. The BBQ was a hit. It always feels good to pull off a big cook like that. Thanks for looking at what pics I remembered to take.
