Purchased a new 2012 Performer w/Gas Assist today

I've been a member for awhile and retired my Chargriller/With side smoker box. I have a friend who runs a hardware store and purchased NIB 2012 Performer, propane tank and cover for $242.00 out the door. The Weber held at 370 degrees with hardwood lump. Started with 3 baked potatoes drizzled with EVOO and some spices and onion slices wrapped with foil. After 45 minutes I threw on the Pork Chops (Sams Club) rubbed with my homemade rub (around 20 ingredients in the rub-it took me around 3 yrs. to perfect it enough where I'm happy with the flavor). I use the rub on chicken and pork. I threw in 4 small chunks of Hickory Wood when chops went over the direct heat. Cooked for 7-8 minutes per side and pulled at around 150 degrees with my Thermopen ( you may not be able to see the Thermopen because its Camouflaged hopefully it shows up in the photo). Chops were moist. Baked potatoes had a great flavor. We also had a side of fresh Asparagus and pork n beans with bacon sliced in. Didn't know the wife was doing pork n beans and Asparagus. I told her I could of done it all on the Performer. Tomorrow I'm doing 3 slabs of Baby Backs. My plan was to purchase there performer and use along side a XL BGE. But now I may not purchase a BGE. The Weber held a steady temp. I may purchase a Sous Vide machine for when I do steaks instead. Anyways glad I finally purchased a Weber. Thanks for a great forum. http://flic.kr/p/ekpuPb

Chops look great. Love the look of your Performer. Between my Performer and WSM 22 I feel set for quite a while. Enjoy it. We did our Thanksgiving turkey in the Performer and everyone raved about it. This year it will probably be done in the WSM but once you do your turkey on a Weber you will never go back. Enjoy
 
no need for the sous vide... (hey that rhymes!!!)

just grill your steaks OFF the direct heat and use the Thermapen to bring them up to around 10/15 degrees below your desired temp
then sear them over the heat for the final few minutes ...this is the reverse sear - lots of versions on here..

Sweet looking deal Roger, my performer has been thru a bottom grate already and on third set of charcoal baskets! It has burned a ton of coal! Have not done a Thanksgiving Turkey in the house in over a dozen years. Once those original tin baskets burn out go onto Amazon there is a seller with the original metal bar baskets, they last a lot longer.

Thanks for the info Al. I'll do that. Cooked BabyBacks today...no pictures everyone was starving. Put on around 11:00 am @ 270 or so. Held that for around 3 1/2-4 hours. Just added a 15 Kingsford to the lump from yesterday and threw on a 1/2 dozen or so toward end of cook. Added a few Hickory chunks. After I close off vents still have charcoal left. Babybacks were rubbed down with my homemade rub. Sprayed every 1/2 hr. with Apple/Apple cider. Foiled at 2 1/2 hours with butter, honey and more rub. Finished with SBRs.
 
Sounds like you and the new toy are getting along pretty well. I strongly recommend the gourmet system with the sear plate next. Congrats and the very best of luck with it.
