Pulled Pork (pull now or later?)

I am smoking 2 shoulders right now for my parents who need it for a picnic in two weeks. I was going to smoke it today and then freeze it for them as I have no other time to do it.

My question is:

Should I pull it now and freeze it?

OR

Keep it in bigger chunks, freeze it, and then let them heat it up and pull it later?

I guess I am afraid of moisture loss by pulling it now and wondering if keeping it whole will retain most of the moisture anyway.

sauce it now or later, that does not matter,butt you'll wanna pull it now and freeze it.
 
Pull it now and force out as much air as you can when you zip lock it.I would add the sauce when it was served.
 
Pull now and make sure you spread it out on a baking sheet (or whatever) to COOL before packing the bags!
 
BTW, best way to re-heat is to boil a pot of water, turn the heat off when it comes to a good boil, and place the frozen bag in it then. Treats your PP nice and gentle.
