Puerco Pibil Sunday morning

There's something really beautiful about seeing the smoke from my WSM drift through the dappled sunlight and over the neighborhood at 6 AM on a beautiful Sunday morning.
Prepped and marinated the pork last night, lit the WSM at 5:30 AM so I can bring Cochinita/Puerco Pibil down to mom's for lunch today. Big sister is in town from NC, and little sis and hubby are meeting us in Tom's River, NJ (1 hr 45 min south of me).
Picked red onions? check. Guacamole? check. Corn tortillas? check. Habanero salsa? Check. Good to go. Another couple hours for the pork and we're off. I'll bring a camera and hope to post some pics later tonight.

Morning has broken. Yes, having the smell of the smoker in the air is a great start to what will surely be a good day. Enjoy, it sounds like a great time with family and food.
