Prime Rib Roast

In case anyone lives in the Indianapolis area, Marsh here is selling USDA Prime (allegedly) rib roasts for $12.99/lb. I picked up a 3 bone, 4ish pound roast and am now trying to decide what to do with it.

The butcher said he had loosened the bones and it is already tied, so will that impact me if I decide to cook it as a roast rather than as individual steaks?

My issue is what to do with the rest of the roast if I cook it all at once, as it would just be my wife and I eating it. Is there a good recipe for what to do with leftover rib roast?
 
No impact if cooked as a roast.

You can use the meat in any way you'd use 'roast beef' - sandwiches (the "French Dip" is made with sliced rib roast), slivered or chopped and tossed with pasta, scrambled into eggs, used in tacos or the like, etc.
 
I have always roasted a full rib roast for Christmas and had the rib cut for easy slicing and for the natural rack then the next day throw the ribs on the BBQ with some BBQ sauce always great

If you like your beef rare you can cut the uneaten part into steaks and give them a quick sear over high heat.

I'm trying to decide between Wolfe Rub Bold and Montreal Steak seasoning for this one. Does anyone have experience using WRB on this cut?
