Haven’t posted much lately but have made some easier cooks which all turned out awesome. Just a few pics in case you weren’t hungry enough.
Very well marbled flanken with my newest potato dish, Canadian shingles.
Made some queso and roasted habanero for chili chees dogs, also fried onions and chopped dill for a traditional dog too.
Then I made pepper stout beef, no sides just beef sammies with havarti cheese slices and homemade horsy sauce.
Wings 2 ways, killers hogs hot bbq and jah love Jamaican jerk wings. Last time I used the jerk in a paste this time I used it like a dry rub. Both ways are great, paste is way hotter for sure.
Then tonight I made skirt steak tacos....in record time to beat the rain. The MRS made guac which was killer good.
I can only upload 20 pics per post.

I strongly agree with Bruno.
What did you think of the Flanken Ribs? Still my favorite beef cook/dish!
I don’t think I used the right spice on it or enough for sure.
They were pretty good bit I need another shot at it....not complaining just think it could have been better.
All the other beef in those pics did it for me more than those thin ribs, especially that PSB......that was really good.
5 pound roast, pretty thick, it takes longer than you think it should to cook.

Darryl, if you cook all of that at once (and in quantity), you could charge $50-75/person for the buffet! :)

Looks great, man! Been eating well up north!

Thanks for looking, again nothing overly complicated but it doesn't mean it wasn't a big hit.
People are funny though, sometimes it really gets hit out of the park and every once in a while certain people say I should be cooking for a living.
Food truck is usually the biggest recommendation.
I know its good food but that is another level for sure.

Didn’t want a whole thread for another simple cook.
Got something started about 20 minutes ago..........
Hashbrown casserole and green salad all upcoming.
The hashbrown casserole is a fat free pan of awesomeness.
It has butter, ranch, bacon, cheese, sour creme, salt, pepper, onions, crispy onions, and potatoes.
Fat free......right?
I read it online so it has to be true......
I also truss my chicken non traditional. Wrap it so the legs are not up against the breast.
I want the breast to cook to temperature and it cooks way better without the leg up against it.
Also the legs and thighs can take it like this.
You can see the wings tied tight........this works okay too.
Pics to come.
