Has anyone tried a Porketta roast on the WSM? It is basically a boneless pork loin roast with the following seasonings? I make them in the oven for the holidays but was thinking about smoking it. I think the fat content would make it any ideal candidate.

1 T dill seed
1 T fennel seed
1 t dried oregano
1 t lemon pepper
1/4 t onion powder
1/4 t garlic powder

Most recipes I see call for a boneless pork butt roast. A pork loin roast's lack of intramuscular fat would make it a less than ideal candidate for low/slow.

Where in Minnesota? I became familiar with porketta when my sister married a guy from "da range" - Hibbing. In love with it ever since and have had the same thought as you of smoking a porketta.

Considering the post about insufficient instramuscular fat, it probably won't be a long smoke/cook.

Somewhere in the grilling section there are several long threads about using fire bricks, blocking off half or so of your weber kettle grill (charcoal grate), using the mini-minion method to control heat and add smoke wood, place the meat on the half of the grill without the heat, place the lid with vent open over the meat so it draws the smoke through the meat side of the grill.

I've used this method in grilling steaks and pork chops and it is very effective, even with relatively quick cooking times in 1) adding smoke flavor, 2) controlled cooking time. Having used this technique I really think it would work well.

I grew up on the Range. We used to get our porkettas in Hibbing. We had them all the time for Christmas, Easter, Bovey Farmer's Day, any special occasion. I can get them in Southern Minnesota from a local butcher. She says I am the only one that orders them. I usually make one for cold sandwiches during Thanksgiving weekend so my family has some comfort food from the Range.

Based on what I read, I may try my Weber Gas Grill first and smoke some turkeys on the WSM this Thanksgiving.

Nobody beats Maslokz (sp?) meats. Although I can't remember now if that butcher shop was in Hibbing or Virginia. I'm thinking Virginia.

If I remember right, didn't the porketta also have garlic slices pushed into slits in the roast?

If you want to try the charcoal grill option, be sure to check your local Craig's list. Many weber kettles for sale. Not uncommon to pick one up for $25 or less.
