Pork tenderloin fajita tacos

Defrosted some Costco pork tenderloins.

Butterflied them so they were mostly flat.

SPOG, cumin, oregano, red pepper flakes, juice of a fresh orange and one lime and a dash of evoo.

Quick marinade and will then pan sear and and then slice. To be served with peppers and onions in tacos.

Brett, you make me want to spend a lot more time in the kitchen! Right now, I’m spending about all my time supporting my wife with rehab from spinal surgery!
Tim; I broke my back 08/03/13, I had to wait two weeks (lie still less) before they could fuse me (13" SS Rods) We had already paid for a Playa Del Carmen vacation so we flew out 09/14/13 and went to Xcaret on 09/16/13 & 09/17/13

I bought a really cool walking stick there, and I walked that park for two days straight. With every step, I felt my back get stronger, and by the time that vacation was over, I wasn't fully healed, but I surely felt healed. Take your bride to Xcaret, my guide service is always available :)

 
Perspective, her surgery was 12-30-2024
She is barely walking 30’ with a Walker as of PT today! Five “Cages” 10 screws, two plates. This has been a harrowing experience for all parties!
Here’s the real kicker…
House was built in 1935 (Cape Cod) one bathroom,UPSTAIRS! Thirteen steps on a 12/12 pitch! No way to put a bathroom in on ground floor without selling a few kidneys so, even with a builder buddy we can’t figure out how to do it without spending a bloody fortune! We both love the place, and just got a few “appointments” built which we have wanted for years then the back issue started!
Man plans, God laughs! I’m cryin’!
