Just did a couple whole pork shoulder picnics. When I was prepping the meat before the cook I got a very piggy smell off one piece. I checked it and there was a gland of some sort near the hock. I removed it as best I could, it seemed to be the origin of the smell.
I read one of the FAQ's here which mention this sort of thing, but not the smell.
Now the meat is being pulled and I thought I got a whiff of this. Not too strong, my wife can't smell it. We couldn't see anything like a gland during the pull. I can keep this section of cooked meat separate from the rest.
Anyone else with this experience ? Probably not a cause for concern, thought I would poll the group here. Thanks !
