Pork shoulder taint ?

Hello all,

Just did a couple whole pork shoulder picnics. When I was prepping the meat before the cook I got a very piggy smell off one piece. I checked it and there was a gland of some sort near the hock. I removed it as best I could, it seemed to be the origin of the smell.

I read one of the FAQ's here which mention this sort of thing, but not the smell.

Now the meat is being pulled and I thought I got a whiff of this. Not too strong, my wife can't smell it. We couldn't see anything like a gland during the pull. I can keep this section of cooked meat separate from the rest.

Anyone else with this experience ? Probably not a cause for concern, thought I would poll the group here. Thanks !

Thanks. I've marked the packages which had the meat from the section affected. If there are any off flavours I'll know where it's from. It's probably fine.

Nice to have the freezer stocked with pulled pork. :D
