Pork Ribs......what am I doing wrong here?


 
I always go for the baby backs instead of the spare ribs.
I cook em/smoke em at ~225-250 for a couple hours and start checking for color every 1/2 hour or so until I get that happy feeling.
Foil em and cook em for an hour or so depending on where the cooker temp is running and then start checking em pretty regular.
Sometimes they are ready at first check, sometimes I check several times.
My family likes the bones to pull out clean and they like the outside to be soft and tender too.
Not saying the way I do it is right for anyone else, I cook for myself and my family and I have tweaked the method to suit their taste.
 
86 the foil step. I had a similar issue and just let them go unfoiled for the entire cook. I'll spritz with a apple juice/bourbon mixture (so so good), but definitely dont do foil anymore.

I'll second that. I use bend test and check temp and tenderness for doneness.
 
Skip the foil.
that was me, and then I discovered paper. I highly recommend 1.5 hours on the grill, then about.75 hours wrapped in paper then .5 hours back on the grill with your favorite BBQ sauce. Temp at approximately 275 degrees
