pork loin with grilled pinapple salsa and blue cheese grilled potatoes

This is my first one so please be kind

Pork loin ( boneless) on sale marinated in sweet and spicy marinade.
Salsa: grilled pineapple ( cooled) fine diced red,yellow and green bell peppers, jalapeño and
Tart cherry juice
Potatoes: coated olive oil, S&P a little tonys. Grilled, finished in oven tossed with blue cheese
Dressing
Gear : OTS, Kingsford briquettes ( full chimney)

The marinade was store bought, Lawry's sweet and spicy. It definitely had sirracha in it. Marinated in fridge then brought to room temp.

Grilled the pineapple for salsa first then the potatoes. Finished roasting the potatoes in the oven.
Took the pork loin, seared on each side on direct heat ( as hot as I could get it), a couple of minutes
On each side. When done, moved to cool side of grill and inserted temp probe.

Cooked till internal temp was 150 ( should have pulled at 145 but my wife does not like pink). Wrapped in foil let rest 15 to 20 min).

Sliced it

Then plated it with the pineapple salsa, blue cheese coated grilled potatoes and steamed green beans

All in all it was pretty good for a seat of my pants kind of meal. The pork was moist although the marinade was not as noticeable as I had hoped ( still have 1/2 the loin for some roast pork sandwiches) The simple grilled potatoes were the best thing on the plate.
 
Darn good looking meal....can I get seconds please? So you roast the potatoes and then toss them in a blue cheese dressing?
 
No need to ask for kindness. This looks awesome! The true test is your family. I hope they enjoyed the fruits of your labor.

Cut them in half ( or quarters if big), coat with olive oil, S&P and Tony's then grill them ( cut side down). Move them around after you get good grill marks then onto a cookie sheet with foil and a little oil, into oven 375 for about 30 min. Take them out, let cool a little cut each potato half into 4 to 6 bitesize chunks. Transfer to bowl add a very small amount of blue cheese dressing, toss and plate.

Although I know blue cheese dressing is not healthy, I am sure I used a whole lot less than if I had done traditional baked potatoes with sour cream/butter. The heat of the potatoes melts the dressing and gives it a nice coating, so here is one of the times where less is more. Next time I'm gonna add some chopped fresh dill to the potatoes, I didn't have any on hand and was too lazy to make a store run.

What???? I have never heard this before, must be why it tastes so good!!!!

Actually today the pork loin was even better, sliced what was left as thin as I could, warmed up in oven then loaded fresh roll, spicy mustard, pork, some guy fieri kc sauce ( all I had in fridge) topped with my best guess at Neely's sweet and spicy slaw from memory. It was better today than yesterday ( sorry for the less than stellar photos)
