Pork Loin Pork Chops with a Surprise

So went to Shop Rite today to pick up something for dinner. saw they had these Pork Loin Chops on sale and they had beautiful fine marbling all through them, and then I saw they had the nice hand picked crab meat also on sale.
Mmmm, never seen that before so I did a little experiment

Sauteed a yellow onion in butter and EVOO, S&P, and added the Crabmeat and some Four Seasons Bread Crumbs.

Buttoned up with toothpicks, dressed with a little EVOO, and Penzey's Spanish Style Smoked Paprika

Looks amazing, Bill. I'd call that one successful "experiment". It's photos like these which make me really hate my shellfish allergy.

Two Questions: 1) how did the seafood flavor marry up with the pork flavor ... Good balance or did one overtake the other?
2) I live in South Louisiana, so can you ship me one of your Custom Beer Cooler's? :cool:

Nice choice of knife and beer as well. I don't have that particular Shun knife, but I do have some of that locally brewed (for me) Summit IPA.
 
Bill, no surprise here: This all looks great! Delicious! Experiment succeeded! But I REALLY would like a slice of your wife's bread (or at least a few tips on how it's made) :)
 
Pat the combo was very nice together, you really tasted the crab in the middle and kind of added a nice moisture to the center. Never saw this combo before but the pork loin melds well with it. Would do this one again for sure. The Penzey smoked paprika does a lot for the pork also.
Brian I have no idea how the CEO made it but will ask her. She was working from home today and said she over cooked it a bit as she got stuck on a conference call. Couldn't tell by me as it was delicious.
