Pork Loin on a new WSM 14

One year ago I purchased the WSM 22 and began my first smokes. Now, I decided it was time to add the 14 for occasions when it makes more sense to use a smaller unit. This week, the pork loin was our first meal on it (and then under the broiler for a couple minutes with the sauce). It was beautifully moist and tasted fine but I was surprised that it had a taste that I associate with having been done on our PBC (which was added a few months after the 22... along with a couple kettles, lol). The loin came edge-to-edge on the grate. Do you suppose it's possible its drippings landed on the fuel to yield that flavor?

Some probably did, but it looks terrific and sounded that the taste was right on, and not a bad thing that it had a pbc taste. Your 14.5 is a great cooking machine.

Thanks! I should have qualified that I don't dislike the PBC but I don't want that taste on every smoke.

What color was the smoke when you put the loin on? If it was white smoke, Pork Loin absorbs smoke flavoring pretty good. I often wait until my WSM's have blue smoke before putting Pork Loin on

Thanks for the feedback! It was dark outside but I placed the loin immediately after dumping the well-lit coals over the unlit. I'll try waiting a bit next time.

Looks great.
I am on the look out for a 14.5 (37cm) WSM for the same reason, to be able to cook a small joint and use less fuel.
