Pork Loin Chops

I grabbed a pack of pork loin chops at Costco today. They were about 1.5" thick. Brined them a bit this afternoon. Dryed them off and snapped this photo:



Gonna grill 'em up quick and sauce 'em, and serve them with some fried potatoes and broccolette which is new to me (according to the package it's a "sweet and tender relative of broccoli"). Here's a gratutitous shot of KB lighting on the best darn grill on the planet:



Potatoes and onions hit the grate first.



While those browned up I seasoned the chops. One with Caputo BBQ seasoning and 2 with Galena Street.



The kid's chop will be sauced with Sweet Baby Ray's and the grown ups will try a Pomegranate Chipotle sauce.



Pork chops on. First flip:



Sauced and finished indirect.



Plated up with the potatoes and broccolette.



Great dinner. The broccolette was good but the potatoes were awesome. The brine helped keep the chops nice and juicy and tasty.

the nicely filled skillet does look great! im a sucker for taters and onions.

your chops look great. i tried those earlier this week.... and they did not come out as good as yours. i think i had them sliced too thin. looks tasty.

For sure Jon. Very, very lean. I wonder if marinating in bacon drippings would work???
