Put these on the smoker last night about 7:50, both were at about 190 degrees internal at 0400 this morning, pulled them and foiled them and put them back on the smoker. I run hot, have vents at 100% top, 25% for the bottom, am I going to have to close all the vents even more to get the temp down, including top vent? Am using a water pan with water. HAPPY THANKSGIVING to all!!

Why doesn't the pic show up with out having to hit the link? This picture business baffles me.

Bradley, I am no expert on the photo thing but if you are copying the "direct link" vs the "IMG code" that may be the issue. I copy the "IMG code" and the photo shows in the thread. Give it a shot and see if that helps.

Running hot w/full pan: the only recommendation I have is what you already know: close the vents more. I find it interesting how one cook I go X% open for a certain temp, and the next cook it's different. I guess it's all the variables put together.

I started two butts myself last night about 8:30, and they're at 160 right now at 4:30. All vents (top and bottom) about 30-50% and grate temp stayed around 260. Had a bit of a crisis at 4 AM when the charcoal started running out and the knob on the panel broke, but I think we're back in business. Your pork is gonna be great!
