Pork compared to beef

Beef has USDA grades, which can indicate the quality/marbling of a beef. Pork does not, so my question is how does the quality of Pork products vary from store to store. FOr example, I normally get my pork butts from Haggen..and they look, and taste great. I have seen pork butts cheaper at Winco, or my commisary, and by looks alone, they appear to be of much lesser quality. Can their be a significant difference as to where you get your butts?
 
With pork fresh is better, bright color is a good sign. You will also find that you will like one producer over another.

I would buy my meat at the commisary for a couple of reasons. Reason 1- the meat isn't enhanced. Reason 2- the beef is at least choice. Reason 3- the pork at the commisary is pretty good because of the contracting process. Hard to believe that government bureaucracy is sometimes a good thing. The meat in my commisary normally has a date on it that lets you know when it was packaged.
 
Lance, not sure what commisary you go to, but most of the pork up here in the greater nw is enhanced..which sucks.
I get my tri tips there though at great prices.

The FT. Campbell commisary is pretty good. Then again right around Campbell there are a lot of farms.
 
I have a friend who owns a restaurant who gets me butts in cryovac, packs of two, for $20. If you know anyone with access to a food wholesaler this is the way to go.

If you're looking for other types of pork, search your area for Kurobuta, Berkshire or other heritage pork producers or retailers.
 
Yeah Lance, it started like a year ago..my commisary got a new meat case, and slowly most of the meat is case ready, with a heavy emphasis on John Morrel enhanced pork products, which I wont buy. I think I will look for some heritage pork someday thanks for those brand names.
