Hate to do this, but exactly what cut is a "butt" and where does it come from?
Is it the same as a shoulder roast??

But then does everyone know about a "tri tip" cut?

"Butt" is a part of the pork shoulder and is sometimes called a shoulder roast.

A "whole pork shoulder" is the actual shoulder and front leg of the pig with the bony part of the shank and foot cut off. This can be smoked whole, but is generally too big for the WSM.

The whole shoulder is broken down into two pieces--the "shoulder butt" (aka "Boston butt") and the "shoulder picnic". The butt is the upper half of the shoulder and the picnic is the lower half.

I finally found pork butts at my local DeMoulas/Market Basket this week. The last few weeks none of the local markets had them out for sale.

Question: Do supermarkets use butts to grind up for sausage, etc?
